Ceremonial Grade Matcha

Kagoshima, spring 2026. Shaded for three weeks before picking, then stone-ground to order. Sweet, vegetal, with a savoury finish.

Three weeks under cover changes the plant. With less light it makes more chlorophyll and holds more of its amino acids, and that is where both the colour and the sweetness come from. The same leaf grown in full sun is a different drink.

30 g, about fifteen bowls, roughly €1.65 a bowl.

Preparation. Two grams, sifted. Twenty millilitres of water at seventy to eighty degrees, worked into a paste, then the other forty. Whisk for twenty to thirty seconds in a W rather than a circle.
